Apple Crumble Muffins

Yields: 12 muffins Best for: Breakfast, snacks, meal prep, lunchbox treats

Ingredients

Muffins:

  • cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ cup 1 stick unsalted butter, melted
  • 2 large eggs
  • ½ cup milk
  • 1 tsp vanilla extract
  • cups diced apples about 2 small apples, peeled & cored

Crumble Topping:

  • ½ cup all-purpose flour
  • ¼ cup light brown sugar
  • ½ tsp cinnamon
  • 4 tbsp unsalted butter cold & cubed

Instructions

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together melted butter and sugar until smooth. Add eggs, milk, and vanilla; whisk until combined.
  • Add flour, baking powder, baking soda, salt, and cinnamon. Stir until just mixed. Gently fold in diced apples.
  • Divide the batter evenly among muffin cups.
  • In a small bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter with a fork or your fingers until you get pea-sized crumbles. Sprinkle evenly over the muffin batter.
  • Bake for 18–22 minutes, or until a toothpick comes out clean. Let cool slightly, then enjoy warm.

Notes

Tips & Variations:
Try adding chopped walnuts or pecans to the crumble for crunch.
Use a mix of apple varieties for more flavor depth.
These freeze beautifully; just wrap individually and thaw overnight or microwave to reheat.
